  1. Begin by rinsing and draining the chickpeas thoroughly. Halve the cherry tomatoes, dice the cucumber, and finely chop the red onion. Set them aside.
  2. In a large mixing bowl, combine the cottage cheese and the chickpeas. This forms a creamy, protein-packed base.
  3. Fold in the halved cherry tomatoes, diced cucumber, and red onion. Gently mix until well blended but still intact.
  4. Drizzle olive oil and lemon juice over the mixture. Sprinkle with salt and pepper according to taste.
  5. For the finishing touch, add freshly chopped parsley or cilantro.
  6. Serve chilled. Let it sit in the fridge for about 20 minutes before serving.

Notes

Substitutions: Swap cottage cheese for Greek yogurt for a creamier texture. Best enjoyed fresh, but if there are leftovers, they can be stored in an airtight container for 2-3 days. Avoid freezing for best results.
