Preparation
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper for easy removal.
- In a medium bowl, whisk together the all-purpose flour, granulated sugar, cocoa powder, baking powder, and salt until well combined.
- In a large bowl, mix the melted butter, eggs, red food coloring, and vanilla extract until smooth and well-combined.
- Gradually fold the dry mixture into the wet mixture using a spatula, being careful not to overmix.
- In a separate bowl, beat the softened cream cheese until smooth. Add the powdered sugar, vanilla extract, and egg, mixing until just combined.
- Pour half of the brownie batter into the prepared baking dish, spreading it evenly. Top with the cheesecake layer, then dollop the remaining brownie batter over it and swirl gently with a knife.
Baking
- Place the dish in the preheated oven and bake for about 30-35 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs.
Cooling and Serving
- Allow the brownies to cool in the pan for at least 20 minutes before slicing into squares. They taste better after chilling in the fridge for a bit!
Notes
For a healthier option, use whole wheat flour and coconut sugar. Be careful not to overbake for best fudginess. Store in the refrigerator for up to one week or freeze for three months.
