Preparation
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
- Add the chopped onion and minced garlic. Cook for about 2-3 minutes until the onion is translucent and fragrant.
- Stir in the chopped carrots and celery. Sauté for another 3-4 minutes, allowing the vegetables to soften slightly.
- Add the chopped zucchini and green beans to the pot, stirring well to combine.
- Add the canned diced tomatoes, along with their juices, and pour in the vegetable broth.
- Add 1 teaspoon of dried thyme and season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce heat and let it simmer for about 15-20 minutes, or until all the vegetables are tender.
- Before serving, garnish with freshly chopped parsley for an extra pop of flavor.
Notes
This soup can be stored in the refrigerator for up to 4 days and freezes beautifully for up to 3 months. Reheat on the stove over medium heat until warmed through. Add broth or water if it thickens after freezing.
