Ingredients
  

Base Ingredients
  • 1 tablespoon olive oil
  • 1 unit onion, chopped
  • 2 cloves garlic, minced
Vegetables
  • 3 units carrots, chopped
  • 2 stalks celery, chopped
  • 1 unit zucchini, chopped
  • 1 cup green beans, trimmed and chopped
Liquid Ingredients
  • 1 can diced tomatoes Include juices
  • 4 cups vegetable broth
Seasoning
  • 1 teaspoon dried thyme
  • to taste salt and pepper
Garnish
  • to taste fresh parsley For garnish

Method
 

Preparation
  1. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  2. Add the chopped onion and minced garlic. Cook for about 2-3 minutes until the onion is translucent and fragrant.
  3. Stir in the chopped carrots and celery. Sauté for another 3-4 minutes, allowing the vegetables to soften slightly.
  4. Add the chopped zucchini and green beans to the pot, stirring well to combine.
  5. Add the canned diced tomatoes, along with their juices, and pour in the vegetable broth.
  6. Add 1 teaspoon of dried thyme and season with salt and pepper to taste.
  7. Bring the mixture to a boil, then reduce heat and let it simmer for about 15-20 minutes, or until all the vegetables are tender.
  8. Before serving, garnish with freshly chopped parsley for an extra pop of flavor.

Notes

This soup can be stored in the refrigerator for up to 4 days and freezes beautifully for up to 3 months. Reheat on the stove over medium heat until warmed through. Add broth or water if it thickens after freezing.
