Ingredients
  

For the cookies
  • 1 cup sourdough starter Ensure your starter is active.
  • 1 cup unsalted butter, softened Can substitute with salted butter, reduce the added salt.
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
For the filling
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat softened butter, brown sugar, and granulated sugar until light and fluffy (about 3-5 minutes).
  3. Add eggs one at a time, followed by the vanilla extract, and mix until well incorporated.
  4. In another bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
Baking
  1. Drop dollops of dough onto a parchment-lined baking sheet, leaving space between cookies.
  2. Bake in the preheated oven for 10-12 minutes, until edges are firm but centers are slightly soft.
  3. Let cookies cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.
Filling and Assembly
  1. In a bowl, mix powdered sugar, milk, and vanilla extract until smooth to make the filling.
  2. Spread a generous layer of filling on the underside of one cookie and sandwich with another.
