- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 lb of ground beef and cook, breaking it up as it browns. Season with salt and pepper to taste. This should take about 5-7 minutes.
- Once the beef is browned, add the chopped onion and minced garlic. Cook for another 2-3 minutes until the onions are translucent.
- Stir in the sliced mushrooms and cook for an additional 3-4 minutes until they are tender.
- Pour in 1 cup of beef broth and 1 teaspoon of Worcestershire sauce. Let it simmer for about 5 minutes to combine the flavors.
- Reduce the heat to low and stir in 1 cup of sour cream. Mix well until everything is smooth and creamy.
- Serve warm, garnished with freshly chopped parsley on top.
Notes
Replace the beef with ground turkey or chicken for a lighter version. Avoid cooking the sour cream on high heat to prevent curdling. Store in an airtight container in the refrigerator for up to 4 days, or freeze in portions for up to 3 months.
