  • 1 box red velvet cake mix Choose a quality brand for best results.
  • 1/3 cup vegetable oil Can substitute with melted coconut oil.
  • 2 large eggs
  • 1/4 cup water Use room temperature water.
Cheesecake Layer
  • 4 oz cream cheese, softened For a dairy-free option, use plant-based cream cheese.
  • 1/2 cup sugar
  • 1 tsp vanilla extract Use pure vanilla for enhanced flavor.
  • 1 large egg Additional egg for cheesecake layer.
  • 1/4 cup all-purpose flour

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan.
  2. In a large mixing bowl, combine the red velvet cake mix, vegetable oil, two eggs, and water. Stir until well combined and smooth.
  3. In another bowl, beat the softened cream cheese until creamy. Add in the sugar, vanilla extract, one egg, and flour. Mix until smooth and well blended.
  4. Pour half of the red velvet brownie mixture into the greased baking pan. Spoon dollops of the cheesecake mixture over it and gently spread. Pour the remaining brownie batter on top, slightly swirling the mixtures together.
Baking
  1. Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted comes out clean.
  2. Remove from the oven and let it cool completely on a wire rack. Once cooled, slice into squares and enjoy!

Notes

Top with crushed nuts, chocolate sauce, or fresh berries for added flavor. Store in an airtight container in the refrigerator for up to one week, or freeze for up to three months. Thaw overnight in the fridge or at room temperature.
