  • 1 pound ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup cooked rice
  • 1 packet taco seasoning (ensure it’s Halal-certified)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked, about 6-8 minutes. Drain any excess fat.
  3. Add the taco seasoning along with about 1/4 cup of water to the skillet. Mix well and allow it to thicken for about 3-4 minutes.
  4. In a large mixing bowl, combine the cooked rice, black beans, corn, and diced tomatoes. Add the seasoned ground beef and mix thoroughly.
  5. Transfer the mixture into a greased casserole dish, spreading it evenly. Top generously with shredded cheese.
Baking
  1. Place the casserole in the preheated oven and bake for about 20-25 minutes, or until the cheese is melted and bubbly.
Serving
  1. Once out of the oven, let it cool for a few minutes. Garnish with chopped cilantro, slice, serve, and enjoy!

Notes

This casserole is perfect for meal prep! Store leftovers in an airtight container in the fridge for up to 3-4 days, or freeze for up to 3 months. To reheat, place in the oven at 350°F for about 20 minutes or use the microwave, but be careful not to lose texture.
