  1. Wash the cabbage thoroughly, remove any wilted outer leaves, and cut it into quarters before thinly slicing.
  2. Slice the onion and mince the garlic.
Cooking
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat until warm but not smoking.
  2. Add the sliced onions and sauté until translucent, about 3-5 minutes.
  3. Stir in the minced garlic and cook until fragrant, about 1 minute, being careful not to burn.
  4. Add the sliced cabbage, combine with onions and garlic, and season with salt and pepper.
  5. Cook for 5-7 minutes, stirring occasionally until the cabbage is tender and caramelizes, adjusting seasoning as needed.
  6. Remove from heat and serve hot, optionally topped with extras like red pepper flakes or lemon juice.

Notes
