Dough Ingredients
  • 2 cups sourdough starter Ensure it's active and bubbly.
  • 4 cups all-purpose flour Can substitute with whole wheat flour.
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 2 large eggs
  • 1 cup almond flour
  • 1 teaspoon salt
  • 1 tablespoon vanilla extract
  • Powdered sugar for dusting For serving.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together the all-purpose flour, almond flour, sugar, and salt until well combined.
  3. In another bowl, mix the sourdough starter, melted butter, milk, eggs, and vanilla extract until smooth.
  4. Gradually fold the wet mixture into the dry ingredients. Be gentle as you incorporate everything together.
  5. Transfer the dough onto a lightly floured surface. Knead it gently for about 2-3 minutes until smooth and elastic.
  6. Roll the dough into a rectangle about 1/4 inch thick and cut into rectangular pieces, roughly 4 inches by 6 inches.
  7. Sprinkle a thin layer of almond flour on each piece of dough and fold it over, rolling it again into a tighter shape.
  8. Grease a muffin tin and place the rolled dough pieces inside.
Baking
  1. Bake in the preheated oven for 20-25 minutes or until golden brown and flaky.
  2. Remove from the oven and dust the tops with powdered sugar while they are still warm.

Notes

For nut-free, replace almond flour with all-purpose flour. Cool for 5 minutes before serving. Store in an airtight container for up to 3 days at room temperature or refrigerate for up to a week.
