Ingredients
  

Churros
  • 2 cups water
  • ½ cup unsalted butter
  • 1 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup sourdough starter Ensure it's active and bubbly
  • 1 teaspoon vanilla extract
  • 4 cups oil for frying Use a neutral oil
  • 1 cup granulated sugar For coating the churros
  • 1 teaspoon cinnamon For coating the churros
Chocolate Dip
  • 1 cup chocolate chips Semi-sweet or dark
  • ½ cup heavy cream For smooth chocolate sauce

Method
 

Preparation
  1. In a medium saucepan over medium heat, combine the water, unsalted butter, and salt. Bring it to a gentle boil.
  2. Once boiling, reduce the heat and quickly stir in the all-purpose flour until a dough forms. Continue to stir for about 1-2 minutes to slightly cook the dough.
  3. Remove the dough from heat and allow it to cool for a minute. Stir in the sourdough starter and vanilla extract until fully combined.
Cooking
  1. In a large pot, heat the oil over medium-high heat. Test if it’s ready by dropping a small piece of dough; if it sizzles, it’s ready!
  2. Transfer the dough to a piping bag fitted with a star-shaped tip. Carefully pipe strips into the hot oil, cutting them to your desired length. Fry until golden brown, about 2-3 minutes on each side.
  3. As the churros finish frying, mix the granulated sugar with cinnamon in a bowl. Remove churros from the oil, let them drain, then toss in the sugar mixture while they’re still warm.
Chocolate Dip
  1. In a small saucepan, heat the heavy cream until just simmering. Remove from heat, add chocolate chips, and let it sit for a minute. Stir until smooth and glossy.
Serving
  1. Arrange churros on a plate with the warm chocolate dip on the side. Enjoy!

Notes

Store leftovers in an airtight container at room temperature for up to 2 days, or freeze for up to 1 month. Reheat in the oven at 350°F for 5-7 minutes for best results.
