Ingredients

Main ingredients
  • 1 head cauliflower Cut into florets
  • 2 tablespoons butter Use unsalted for better control of salt
  • 1/4 cup cream cheese Can substitute with dairy-free options
  • Salt to taste
  • Pepper to taste
  • Garlic powder (optional) Adds extra flavor

Method

Preparation
  1. Remove the leaves from the cauliflower head, cut it into florets, and rinse under cold water.
  2. In a large pot, bring water to a boil and add the cauliflower florets. Cook for about 10-12 minutes, or until fork-tender.
  3. Drain the florets completely to eliminate excess water.
  4. Transfer the drained florets to a mixing bowl. Add butter, cream cheese, salt, pepper, and garlic powder (if using). Blend until smooth and creamy.
  5. Taste and adjust salt and pepper as necessary.
  6. Serve in a warm dish, optionally drizzling with olive oil or sprinkling with herbs.

Notes

For dairy-free options, substitute butter and cream cheese with olive oil or coconut cream. Store leftovers in an airtight container for up to 3 days, or freeze for up to a month.
