Preparation
- Place the chicken breasts in the bottom of the slow cooker.
- Open the regular and cream corn cans, and pour both over the chicken.
- Sprinkle the taco seasoning evenly across the top.
- Cut the cream cheese into blocks and spread them over the corn and chicken.
- Add a pinch of salt and pepper to taste.
Cooking
- Cover your slow cooker and set it on low for 6-8 hours, or high for 3-4 hours.
- Once cooked, shred the chicken using two forks and mix all the ingredients together.
- Toss in the shredded cheddar and chopped cilantro, and mix well.
Serving
- Serve hot, garnished with additional cilantro or cheese as desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in freezer-safe bags for up to 2 months.
