Ingredients
  

Main Ingredients
  • 4 pieces chicken breasts Ensure they are Halal-compliant.
  • 15 oz can of corn
  • 15 oz can of cream corn
  • 1 package taco seasoning
  • 1 cup cream cheese (8 oz)
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped cilantro
  • Salt and pepper to taste Balance is key!

Method
 

Preparation
  1. Place the chicken breasts in the bottom of the slow cooker.
  2. Open the regular and cream corn cans, and pour both over the chicken.
  3. Sprinkle the taco seasoning evenly across the top.
  4. Cut the cream cheese into blocks and spread them over the corn and chicken.
  5. Add a pinch of salt and pepper to taste.
Cooking
  1. Cover your slow cooker and set it on low for 6-8 hours, or high for 3-4 hours.
  2. Once cooked, shred the chicken using two forks and mix all the ingredients together.
  3. Toss in the shredded cheddar and chopped cilantro, and mix well.
Serving
  1. Serve hot, garnished with additional cilantro or cheese as desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in freezer-safe bags for up to 2 months.
